Snappers are good sized now, want to use some for bait for big fluke, bass, and blues.
So hows the best way to do this without killing them?

Through the eye sockets, bypassing the eyes. In one, out the other.

If you're on a kayak or boat, you can also hook them through the back. Careful not too deep or you'll paralyze them.

What Charlietuna said is good. If you want to fish from shore or an inlet I have had good luck with a Simple rig with live snapper 15" above the weight. Toss the sinker and snapper out and let the last of the current give it action. I hook the snapper through the back when I have done that. You could also hook behind the eyes but be careful not to go near the brain. When fishing an inlet it is important to fish around the slack tides unless you are on a boat where you can more easily move around. Also slack at an inlet the fluke bite dies so you really have to time it for the moving water to be just right.
