Preparing game fish

What is your favorite way to prepare your favorite game fish?

I try to stay away from too much oil and butter. I like to drizzle a little olive oil on the pan for fillets, and then use garlic powder, s&p, and lemon pepper. Deelish.
If it's a whole fish I bake it in foil sealed up. Maybe a little italian dressing, some oregano, lemon pepper, and you're good to go.:drool:
