When Dark and I went fishing the last time. I heard a man's rod go SNAP!. I could not figure out whose it was but he must have been pulling in a doozie. How big of a fish does it take to break a rod?

If its a new ugly stik custom a 5 lb. bluefish will do it.
A misplaced hand, high on the handle during the fight, can and will snap one very quickly. Doesn't take a big fish either.

Most rods break from user error, and fixing rods for a few shops I've heard them all.
Most common causes are.
1) high sticking while fighting a fish
2) using heavy braid and setting drag over rods limits
3) buying a cheap rod not intended for it's use
4) lifting heavy fish,or dragging a fish out of water with tip high over your head
5) chips or dings in rod causing a weak spot
6) Bait fisherman casting sinkers and bait over a rods lure rating
There is no such thing as an everything rod
It' is very hard to break a rod on any size fish with a properly set drag, you should run out of line before a rod breaks on a fish.
