Tropical storm or not I will be grilling on friday. Already started the festivities today. Dewars on the rocks.:)

When I see the bizarre tastes of some guys it is really eye opening. Some of you probably have bodies buried in youor backyards.:d
Was talking to dark the other day. I told him we were getting some nice croakers and made some ceviche with the larger ones. He asked me to post the ceviche recipe.

Ceviche for the East coast, Jersey style-

1-3 lbs of fresh fish, pure fillets, no bones
cilantro, fresh, finely chopped
sweet peppers
onions, red or vidalia
1 small jalapeno pepper if you like spicy ceviche, use more if you want
chopped garlic - to taste
tomatoes, garden fresh or from farm market
lemons, fresh, do not use lemon juice it won't taste the same

Chop everything up into fine pieces, mix with small chunks raw and clean fish. Use salt, pepper, or oregano to taste.
mix together in large bowl, use the fresh lemons,

Mangia! with cold brewski.

This guy shows how to steak out bluefish for the grill. Better him than me I give the blues away or release em. When I do steak them I would rather use the smaller ones around 5lbs as they taste better. Just my .02. Props to him for sharing the video.

Recipe for bluefish, guaranteed to be a hit with summer guests-

Get some big nasty blues like the ones above.
Find some hickory planks. Heat them lightly over the fire. Once hot, put bluefish fillets or steaks on top of them.
Grill till done.
When done, throw away bluefish, eat the planks.:cool:

Great summer fare

Before we moved we had this lovely Peruvian couple living next to us. They made the best ceviche I've ever tasted. So good we have never been able to replicate it and it just ruins regular ceviche for me now.

They made it out of a fresh fluke we had provided.


I found my new favorite flounder recipe yesterday trying a new rub.

Step 1. Filet fluke
Step 2. Rub filet with McCormick Grill Mates - Chipotle and Garlic flavor seasoning (let sit for an hour to allow seasoning to soak in)
Step 3. Take 3 table spoons of butter and 3 table spoons of cooking oil and heat in pan. Get it hot enough to get a good crisp on the breading but not hot enough to smoke the oil.
Step 4. Bread filets with Panko and cook for 2-3 minutes on each side.

Enjoy!!!
