    1 bluefish, about 4 to 5 pounds, cleaned and split
    3 strips bacon, cut in half crosswise
    chopped fresh parsley
    1 lemon, cut in wedges
    PREPARATION:

    Place fish on an oiled baking sheet, skin side down. Bake until fish flakes easily with a fork, about 20 to 25 minutes. Sprinkle with fresh parsley and serve with lemon wedges and cheese sauce.


    Cheese Sauce

    • 2 tablespoons butter
    • 2 tablespoons flour
    • 1/4 teaspoon salt
    • dash pepper
    • 1 cup milk
    • 1/3 cup sharp or mild Cheddar cheese
    • 1/2 teaspoon dry mustard
    • dash garlic powder
    PREPARATION:

    In a small saucepan, heat butter over medium-low heat. Stir in flour; cook and stir for about 1 minute. Stir in salt and pepper. Gradually stir in milk. Cook over low heat, stirring constantly, until sauce is thickened. Add cheese, dry mustard, and garlic powder. Continue to cook and stir until cheese is melted.

    gotta try that. I sometimes coat them in mayo, then broil, draws the oil out.

    Some of my favorites:

    1. Mix some hot sauce with some butter on the stove. Take that mixture, rub the whole fillet with it. Sprinkle on some breadcrumbs. Cook in the oven.

    2. Mix some mayo, fresh dill, lemon juice, scallions, together. Take that mixture and rub it all over the fish - all sides, so its completely covered. Get the broiler on your oven up very hot. Cook for 15 minutes or so.

    Honey Mustard Baked Bluefish Recipe

    Serves/Makes: 4 Ingredients:
    • 1 1/2 pound bluefish fillets
    • 2 teaspoons olive oil
    • 2 tablespoons honey mustard
    • 1 tablespoon lemon juice
    • Salt and black pepper to taste
    How to cook:
    • Preheat the oven to 400°F.
    • Rub the bluefish fillets with the oil and place, skin side down, in a single layer in a large ceramic or enameled baking dish.
    • Season with salt and pepper.
    • Bake or grill skin side down for 10 min.
    • While the bluefish fillets is baking, combine the mustard and lemon juice.
    • Brush the bluefish fillets with the mixture and bake 5 to 8 minutes more, until the fish flakes when gently pressed
