    Scale and fillet leave the skin on put it in aluminum foil with some butter put a little garlic powder or adobo if you have it add a little tarragon,dill and paprika if you like you can throw a slice of lemon on top of the fillets close up the foil and throw it on a preheated bbq on medium heat cook for about 5 minutes and the meat should flake right off the skin.
