Sea Robin and Skates
Sea Robin Fillets
1 C. Milk
1 Egg
2C. Bread Crumbs
Mix milk and egg together
Olive Oil
Zucchini
Tomatoes
Mushrooms
Dip fillets into the milk and egg mixture
then coat with bread crumbs
Bake at 350 for 10 to 15 minutes
While cooking:
Sautee sliced zucchini, chopped tomatoes and sliced mushroom in
2 tbs of olive oil until tender.
Pour over cooked fillets.

Mix together 1/2 c chicken stock, 2 chopped tomatoes, one garlic clove and salt and pepper. Pour over fish bake 325 for 15 minutes.

Throw them in some shake N Bake. Cook for about 15 min.

White wine, lemon juice, salt and pepper, bake.

I use the ezbake way. Chop the head off, quick gut job, take the whole tail, throw on foil lined baking tray, oregano, s&p, italian dressing, great white meat. Have to be decent size though, or too much trouble otherwise.

Great deep fried broiled blackened or pan fried with a dusting of flour.

skate sautee'
Sautee some scallions, garlic, and grape tomatoes. Add 1/2 c. of your favorite white wine. Cut the sweet skate into small chunks add to pan. Cook until done.
